I’m usually team #bloodymary but every once in awhile I like to have a mimosa because why not? As you all may know I’m not really into sweets, especially not sweet drinks, so mimosas with juices and syrups aren’t my favorite. 

I wanted a healthy(ish) mimosa that I could enjoy that actually works like a bloody mary to rejuvenate and help recover. In comes the Kale Green Mimosa recipe to the rescue. The ingredients in this recipe are all fresh and the mimosa is perfect for a cozy fall morning, Friendsgiving brunch, or relaxing spa day with your girlfriends.

The KAle Green Mimosa is meant to be healthy

Reminder, this recipe is meant to be a healthy alternative to a juice or syrup-filled mimosa. The fresh ingredients are meant to help you recover and detox from the night before and to add virtually no added calories or sugar. Because the ingredients flourish in the fall, you should be able to find them all in tip-top shape at the grocery store.

For this recipe you’ll need

  • Kale

  • Water

  • Celery

  • Freshly Grated Ginger

  • Fresh lemon juice

  • Champagne or sparkling wine

You could use sweeter champagne or sparkling wine like prosecco to give the mimosa recipe a little touch of sweetness, add some apple slices in the muddled mixture, or add a smidgen of simple syrup (this would be my least favorite option).

Prep the Kale Green Mimosa

While you are prepping your ingredients, make sure your champagne or sparkling wine is chilling. Nothing like a healthy, warm mimosa. Kidding! 

Muddle the ingredients for several minutes to unlock all the juices and flavors from the ingredients. Double the recipe for up to 4 mimosas. You can strain directly into the champagne flute or into a container and chill until ready to serve your mimosa.

Kale Green Mimosa

A fall-inspired, rejuvenating mimosa for your morning needs

Ingredients

  • 1 cup of kale
  • 1 cup water 
  • 1/4 cup celery
  • 1 tablespoon of freshly grated ginger
  • 1 tablespoon of fresh lemon juice
  • 4 oz of champagne or sparkling wine

Instructions

  1. In a pint glass add all the ingredients except the champagne. Muddle for serval minutes to unlock all the juices and flavors from the ingredients
  2. Strain half of the liquid into one champagne flute and half into another
  3. Top the flutes with champagne or sparkling wine

Notes:

This is a healthier way to enjoy a mimosa than adding juices or syrups. It is not meant to be a sugar-sweet treat. Add simple syrup if you wish to make it sweeter. Great for a cozy fall morning outside or a relaxing spa day with your girlfriends.
