Don’t you just love Trader Joe’s? I mean who doesn’t, right? While I do most of my shopping at Sprouts because I try to buy all organic and non-GMO verified stuff (Trader Joe’s refuses to get the butterfly on any of their products) but when it comes to snacks and frozen food options, Trader Joe’s reigns supreme!

One of my favorite snacks is their Trader Giotto’s Bruschetta in a jar. As you can tell from the name of this blog, I’m kind of obsessed with tomatoes and this Bruschetta can be used in many different ways. Typically, I enjoy it with crackers, but many years ago I actually started incorporating it into my breakfast. The Bruschetta, Eggs, & Quinoa bowl is packed with protein, fiber, and good fats.

What is a Bruschetta, Eggs & Quinoa Bowl?

A healthy bowl of of scrambled eggs and quinoa mixed with Trader Joe’s Bruschetta. This recipe if savory, filling and packed with nutrients, protein, and fiber.

When is the best time to make the Bruschetta, Eggs, & Quinoa Bowl Recipe?

You can enjoy this recipe whenever you want, but it will have the most impact in the morning, especially after a morning workout. The carbs in the recipe will help with your recovery and the protein in the recipe helps repair and build muscle!

Do my eggs need to be scrambled?

No, they do not need to be scrambled eggs. If you’re like me, I have a weird thing with eggs. Sometimes I can’t eat them for weeks, other times I only want an omelet, sometimes I will only eat fried eggs with the yolk carved out, and now I usually only eat scrambled eggs in recipes like this, where there is something else to accompany/mix with them.

I don’t know what’s wrong with me but I have a feeling others can relate to this egg saga! So, with that being said, if you prefer to fry the eggs, with a runny yolk or cooked yolks instead, or even poach the eggs, you can certainly do that and place them on top!

Should I use butter or oil in the pan?

The Trader Giotto’s Bruschetta already has oil in it, so you want to be mindful of using butter in your pan instead of oil when you cook your eggs.

3 easy steps - How to make the Bruschetta, Eggs, & Quinoa Bowl

The Bruschetta, Eggs, and Quinoa Bowl is just 4 easy ingredients and 3 easy steps! All you need is for this recipe is:

Ingredients

  • Trader Giotto’s Bruschetta

  • Eggs

  • Quinoa

  • Butter

Equipment

  • Pot

  • Ladle/spoon

  • Pan

  • Spatula

If you’ve already cooked the quinoa ahead of time (I cook in batches and freeze what I don’t use right away) then it’s actually only 2 steps! For this recipe, all you have to do is:

  1. Cook quinoa (recommend doing this ahead of time, although it only takes about 15 minutes to cook if you don’t mind the extra step in the morning)

  2. Scramble eggs in a frying pan

  3. Add quinoa and bruschetta to pan right before eggs are done and heat through. You can also heat quinoa in the microwave and just add eggs and bruschetta to the bowl

Bruschetta, Eggs, & Quinoa Bowl

A quick and healthy breakfast made with Trader Joe’s Bruschetta

Ingredients

  • 1/2 cup cooked quinoa
  • 2-3 eggs scrambled
  • 1/4 cup Trader Joe's Trader Giotto's Bruschetta
  • 1 tablespoon butter

Instructions

  1. Pre-cook quinoa ahead of time
  2. In a large frying pan, melt butter on medium heat. Add eggs and begin cooking
  3. When eggs are almost cooked add bruschetta and quinoa to the pan to heat through. Serve immediately

Notes:

Cook the quinoa ahead of time. Quinoa takes typically takes about 15 mins to cook.
