One Pan Healthy & Simple Breakfast Recipe
Make a healthy and simple breakfast in one pan, in less than 15 minutes!
Repetition and routine. It’s not always the funnest thing ever but it’s essential, as a self-employed gal, to stay on track and be productive. I try to mix up my schedule as much as I can but there’s one area where repetition and routine doesn’t bother me, and that’s breakfast. I use the same one pan, healthy and simple breakfast recipe darn near every morning!
I won’t lie and say the first thing I do is eat every morning, but instead, make a giant pot of coffee. I do believe breakfast is the most important meal of the day, so as soon as I have an initial cup of coffee and the brain fog has lifted, I head to the kitchen to make my healthy and simple breakfast.
I know that if you follow along on this blog and also on my Instagram then you know I get to eat at an enormous amount of breakfast and brunch spots, but when I’m not doing that, I’m at home making breakfast. I wanted to share with you my healthy and simple breakfast recipe that’s makes virtually no mess and takes less than 15 minutes to make and clean up because you’re cooking it all in one pan. Perfect for people on the go who need a power boost for the day or a boatload of kids to feed quickly!
My personal preference are eggs over hard but you can cook your eggs however you want! If you’re making this recipe for more than 2 people, scrambling the eggs will make it easier and faster. If you’re looking for runny eggs cook them over medium or over easy! Also, I always use either green or chipotle Cholula sauce, it’s just hot sauce doesn’t look very photo friendly on this dish!
Sticking with the healthy theme I always use cage-free and organic eggs, organic super greens blend, and organic butter from Sprouts for this healthy and simple breakfast recipe. I also prefer butter for this recipe versus olive oil or spray, but it’s our choice.
Ingredients - Serves 1:
2 compari tomatoes, quartered
Large handful of organic super greens mix (organic spinach, organic chard, organic kale, organic mizuna)
1 tablespoon of organic butter
Fresh cracked black pepper and sea salt
1 frying pan
Heat the pan on your stove at medium heat. After 30-45 seconds add 1/2 tablespoon of butter and coat pan
Once the pan is coated, crack your eggs into pan. For over easy and medium do not break yolk, for over hard, break the yolk with your spatula. Flip the eggs once the bottom is lightly browned and cooked all the way through and repeat on the other side
While eggs are cooking, cut up tomatoes
Once eggs are cooked, transfer to your plate with the tomatoes
Add the remaining butter to the same pan to re-coat for super greens. Add the greens and sautéed until cooked through (should only take 2-3 minutes max)
Transfer sautéed greens to your plate and sprinkle sea salt and fresh cracked black pepper. If you love hot sauce like me, for a real metabolism boost, add it at this time
You can immediately clean your plate and spatula so you don’t have any dirty pans waiting for you after breakfast! Plus it’s so much easier to clean pans when they are hot! Strike the iron while it’s hot, literally. From start to finish, this one pan healthy and simple breakfast takes less than 15 minutes!
