What are strawberry and lemon rosé popsicles?

Strawberry and lemon rose popsicles are just that! Popsicles made from rosé, fresh strawberries and fresh lemon juice. As much as I’ve come to love sweets I also love cocktails like the French 75 that combine bubbles, something sweet, but also a pop of citrus. 

That’s why for this recipe I went with a dry but sweet rose with some fresh strawberries and some fresh lemon juice to cut through the sweetness and bring out the brightness and crispness of the rosé!

Should I use fresh strawberries?

You do not have to use fresh strawberries, you can also use frozen strawberries. I tend to think fresh strawberries are sweeter than frozen and they are easier to slice. However, it’s up to you, especially if all you have is frozen or you are making these at a time where good fresh strawberries aren’t in season.

When using fresh strawberries make sure to use them when they are ripe, it will make a difference. Non-ripe strawberries tend to be bitter and that would not be a good combo with the lemon and dry rosé. If you wait until they seem like they are going to go bad, that can be the perfect height of sweetness and ripeness!

 
 

How should I serve the Strawberry and Lemon Rosé Popsicles?

The Strawberry and Lemon Rose Popsicles should be served as soon as they come out of the freezer. You may be able to put them on ice for 5 mins for display but I’d be quick about it, especially if it is hot. I know they are super cute and would make a great addition to a brunch spread for a party but it’s just not feasible without them melting or collecting any dander/dust etc.

How long can the popsicles stay in the freezer?

If you’re using molds that aren’t enclosed I would plan to serve them immediately. If they are in an enclosed mold a few days to a week is okay, just keep an eye out for freezer burn or ice build up on the pops.

 
 

How to make the strawberry and lemon rosé popsicles

These Strawberry and Lemon Rosé Popsicles are super easy to make! First you’ll want to wash and remove all the stems from the strawberries. Then you’ll slice a few of the strawberries and quarter the rest.


Combine all the ingredients in a blender and blend until completely smooth. Use food tweezers to add a slice or two of strawberry to each popsicle, then add the popsicle sticks to each individual mold. Pour the mixture into the molds. Freeze for at least 2 hours, serve immediately.

Easy Strawberry and Lemon Rosé Popsicles

Looking to beat the heat and rosé all day?? These freshly made strawberry and lemon rosé popsicles will keep you cool on a hot summer day but also add a delightful and refreshing boozy treat to your summer brunch gatherings!

Ingredients

  • 2 cups washed and stemmed strawberries (basically an entire carton), divided use
  • 1 1/2 tablespoons of fresh lemon juice
  • 2 cups of dry rosė
  • 2 tablespoons agave, substitute with honey or simple syrup

Instructions

  1. Wash and stem all the strawberries. Quarter all but 2-3 strawberries, slice those strawberries remaining strawberries thinly
  2. Using a handheld citrus press, squeeze your fresh lemon juice
  3. Combine quartered strawberries, lemon juice, rosé and agave in a blender or food processor, blend until mixture is smooth
  4. Using the food tweezers, place sliced strawberries in the mold (maybe 1-2 slices per popsicle) and add the wooden popsicle sticks
  5. Pour the mixture into your popsicle molds, freeze for at least 2 hours, serve immediately

Notes

You can use agave, honey, or simple syrup as the sweetener in this recipe. Each one will give a slightly different flavor profile to the popsicles. When using the fresh strawberries, make sure they are very ripe, this will make a difference in the sweetness and reduce bitterness. You can also taste test the mixture before pouring into the molds and if you prefer something more sweet you can always add your choice of sweetener as you see fit.
